How to pickle red onions with fruit juices, vinegar and spices.

Ingredients
  • ½ red onion, sliced thin
  • Juice of ½ grapefruit
  • Juice of ½ lime
  • Juice of ½ orange
  • ½ cup white vinegar
  • ½ tsp salt
  • ½ tsp whole allspice
  • ½ tsp oregano
  • ½ tsp cumin
  • 2 bay leaves
Instructions
  1. Peel and slice your red onion.
  2. Put your red onion slices into a pint-size mason jar or container with lid.
  3. Juice your grapefruit, orange, and lime.
  4. Pour the juices into the jar with the red onion.
  5. Add your spices to the red onion mixture with ½ cup of vinegar.
  6. Close the lid and shake well.
  7. Refrigerate for at least 4 hours, shaking the mixture at least once an hour.
