Slow Cooker Chicken Adobo

Tangy, Filipino-style chicken thighs cooked in the slow cooker for a week’s worth of delicious meals.

Ingredients
  • 1 large yellow onion, sliced into rings
  • 1 tbsp minced garlic
  • ¼ cup ginger, cut into strips
  • 3 bay leaves
  • ½ cup soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp black pepper
  • 1 tbsp Splenda
  • 1 cup distilled white vinegar
  • 4 lbs bone-in, skin-on chicken thighs
Instructions
  1. Chop and set out your ingredients.
  2. Place onion on the bottom of the slow cooker.
  3. Place chicken on top of the onions.
  4. Top with all remaining ingredients EXCEPT for the white vinegar.
  5. Cook on high for 3 hours.
  6. Add vinegar and cook for 30 minutes.
